Food is my passion. Each meal I look for as if sitting at my family’s table. In a world awash in fast food franchises my search for authenticity is now 5 countries and counting. I shared several unique eateries from Panama City.  I thought my Panama City focus was complete in the search for owner operators sharing their food talents until a new friend urged me to visit.

The food business is tough regardless of where you travel on the planet. Low margins & long hours are the only rewards, We read of international celebrity chefs the TV world offers up but in truth they found an easier path and who can blame them.

My search is for places the great Anthony Bourdain did not have time to locate. Great food and value on any budget. The tables I sit at are owned by Chef’s in search of hungry patrons wanting a lovingly cooked meal with the chef’s talents hanging from each bite.

Chef Isaac Villaverde is one of those unique chefs, more talented than most in lovingly creating pastries.  He’s convinced that if there is a food that can represent us anywhere in the world, it is locally sourced food wrapped in buttery puff pastry. And that would speak to his growing following.

La Tapa del Coco is located at the Sistá House premises, on terraces 68 in San Francisco. Panama, Panama, City.

From the creative mind Chef Issac serves patrons a variety of land and water based foods either wrapped in the most unique fluffy pastry or bathed in a variety of home constructed Atlantico sauces and the very best sweet slaw.

The menu is extensive with Panamanian combinations dishes of everything vegan, surf & turf, to simple jerk chicken & crispy pork rinds.

The Chef lives only to serve locally sourced flavors best described as Panamanian coastal style.

My purpose is to share a message with you. If you’re visiting Panama City, do not miss this place!
