Inspired to bring fresh, seasonal, meat-free dishes to the streets, Karl took an old Winnebago, lovingly named “Spud,” and transformed it into a one-of-a-kind food truck. But this wasn’t just any van. “Spud” was outfitted with solar panels, recycled vegetable oil fuel systems, and handmade décor using upcycled materials like reclaimed timber and macramé plant holders.
